It is necessary
- - 1 kg of plums,
- - 320 ml of water (250 ml for cooking plums and 70 ml for agar-agar),
- - 470 g sugar (400 g for marmalade and 70 g for rolling),
- - 2.5 g of citric acid,
- - 10 g agar-agar.
Instructions
Step 1
Rinse the plums, dry and peel them. Transfer the plums to a saucepan, pour 250 ml of water, put on low heat, simmer for about 30 minutes until completely softened.
Step 2
Rub soft plums through a sieve (if desired, you can use a blender) until smooth. Transfer the resulting puree back to the pan, add 400 grams of sugar and 2.5 grams of citric acid, mix well, cook over low heat for another half hour.
Step 3
Put agar-agar in a small dish, fill it with water (preferably water at room temperature) and leave for 15 minutes.
Step 4
Add the agar agar to the saucepan over the plum puree, stir and cook for another three minutes.
Step 5
Cover the form with a sheet of parchment, on which carefully pour the plum mass. Leave to cool at room temperature. After the plum mass has completely cooled, put it in the refrigerator for two hours.
Step 6
Then take the marmalade out of the refrigerator, cut into small cubes or strips, roll in sugar and treat the kids.
