Risotto is a traditional Italian dish based on certain varieties of round rice (vialone, arborio, carnaroli, nano). This cereal is especially rich in starch. Usually it is fried in oil and combined with vegetables, mushrooms, meat and fruits. Having mastered the classic recipes of experienced chefs, you can show your imagination and diversify the dish. For example, make a strawberry risotto - a delicate and satisfying dessert with a bright taste.

- 200-300 g of strawberries;
- bulb;
- olive oil;
- 200-240 g of round rice;
- 10 shrimp;
- salt and black pepper;
- liter of vegetable broth;
- 100 g parmesan;
- mascarpone to taste;
- 150 g cream 20%;
- 0.5 liters of milk;
- 5 g cinnamon;
- a sprig of fresh mint;
- blender;
- colander;
- pan;
- spoon or spatula.
Instructions
Step 1
Sort out 300 g of ripe large strawberries, rinse them thoroughly and let the water drain. Then grind the fruits in a blender.
Step 2
Chop one onion finely and sauté in a medium skillet with 5 tablespoons of olive oil. After 2 minutes, the onion should be soft.
Step 3
Add 240 g of washed rice to the butter and onions and simmer over medium heat. Stir the contents of the pan regularly and cook the risotto until the cereal is translucent.
Step 4
Place a dozen large peeled shrimp in the rice, then add salt and freshly ground black pepper to your liking. Increase the heat and continue to grill the risotto for two minutes.
Step 5
Pour 300 ml of any white dry wine (alcohol - 12% turnover) into the pan. Heat the contents of the skillet over the fire until the alcohol evaporates.
Step 6
Start adding a little boiling vegetable broth to the rice. When the grains have completely absorbed all the moisture, add the next portion - and so the whole liter of liquid. Simmer the dish, stirring constantly with a spoon or wooden spatula.
Step 7
10 minutes after adding the first liquid, add the strawberry puree to the risotto and cook with regular stirring for another 5 minutes.
Step 8
Turn off the heat under the skillet and place 100 g of grated Parmesan cheese on top of the rice. Leave the strawberry risotto under a hermetically sealed lid for 1-2 minutes. Season with creamy mascarpone cream cheese before serving.
Step 9
Strawberry risotto can be made on a milk basis - you get a delicate dessert suitable for baby food. First, melt a tablespoon of butter in a saucepan and add a glass of rinsed Vialone or Arborio to it.
Step 10
Boil half a liter of milk and 150 ml of 20% cream in a separate bowl. Add the milk-cream mixture to the cereal in portions and do not forget to stir all the ingredients.
Step 11
When the cereal has absorbed 2 servings of liquid, add a glass of granulated sugar to it and continue to simmer the risotto. It may take about 20 minutes for the milk and cream to soak in.
Step 12
Place a glass of chopped strawberries in the rice mixture, add one teaspoon of ground cinnamon and let the risotto simmer for another 3 minutes. Garnish the finished dish with halves of large berries and a sprig of fresh mint.
