It is necessary

  • - parboiled rice 0.5 kg;
  • - carrots 0.5 kg;
  • - fresh quince 0.5 kg;
  • - onions 4-5 pcs.;
  • - fresh garlic 1 head;
  • - vegetable oil 150 ml;
  • - hot paprika 1 pc.;
  • - spices for pilaf 1-2 teaspoons;
  • - sugar;
  • - ground red pepper;
  • - salt.

Instructions

Step 1

Soak the rice in salted water for 2 hours. Peel the quince, remove the core, cut into 4 parts, fill with warm water. Leave it on for 2 hours too. Pilaf will be cooked in this water.

Step 2

Peel the carrots and onions. Cut the carrots into cubes and the onions into half rings. Remove the husk from the garlic, divide into wedges.

Step 3

Heat the vegetable oil in a cauldron, fry the garlic on it, then set it aside. In the same oil, fry the onions and carrots until golden brown. Salt a little, add quince and fry for 5-6 minutes over low heat. Pour in the water containing the quince and bring to a boil.

Step 4

Add fried garlic and paprika to the cauldron. Simmer for 15-20 minutes. Season with salt and sugar to taste. Then remove the garlic and paprika.

Step 5

Add rice, let it simmer, then add pilaf spices. Cook the pilaf until the rice is done. When the rice is ready, remove the cauldron from the heat, cover and let it brew for 20 minutes.
