Choosing apples for making charlotte. If you want the taste to be sour, then it is best to take Antonov apples for baking. It is enough only 2 apples, which are thoroughly washed and we remove the core from them. Then, using a sharp knife, cut into strips or slices.

Before cooking, put chicken eggs in the freezer for 10 minutes, after which they will quickly beat into a thick and snow-white foam. Beat the cooled eggs with sugar. Add sugar gradually, little by little, then add soda and citric acid. Beat until foamy and, continuing to beat, add a little flour, and at the very end, ground cinnamon. The dough should be thick, like sour cream.
Step 3
Pour boiling water over the raisins until they become soft, and then dry them on a napkin. Let's prepare a form in which we will bake charlotte with cinnamon. Lubricate the mold - the bottom and walls with sunflower oil using a silicone brush. We spread the dough in an oiled mold. Put nuts, apples, raisins on top.

Preheat the oven to 180 degrees and put the cake for about 30 minutes. Sprinkle the finished cake with powdered sugar through a sieve. Serve hot with jam, honey or sour cream.
