- - butter - 4 tablespoons;
- - cream 20% - 50 ml;
- - salt, pepper - to taste;
- - white bread (loaf) - 3-4 slices;
- - milk - 150 ml;
- - egg - 1 piece;
- - vegetable oil;
- - breadcrumbs.
Instructions
Step 1
For the preparation of cutlets, we use two types of chicken meat: lean breast and more fatty from the legs. Separate the meat from the skin and bones and pass the fillet through a meat grinder. 2 tbsp Melt tablespoons of butter, cool and pour into the minced meat. We also add cream, salt and ground black pepper to it.
Step 2
Remove the crumb from white bread and fill it with milk. Put the crusts in a bowl and put them in the freezer for half an hour.
Slightly squeeze the bread from the milk and pass it through a meat grinder along with the minced meat. Mix the resulting mass and form flat cutlets from it.
Step 3
We take bread crusts out of the freezer and rub them on a coarse grater - this will be the breading for cutlets. For those who do not have the desire to cook the breading on their own, you can use ready-made bread crumbs. Beat an egg in a bowl and dip the cutlets in it, then roll in breading.
Step 4
Heat vegetable oil in a frying pan, put cutlets in it and fry on both sides (8-10 minutes) until golden crisp appears. You do not need to cover the pan with a lid. We check the readiness with a knife or a wooden skewer.
Step 5
Put the finished cutlets on a dish. Melt the remaining butter and hot water the cutlets. Decorate with herbs if desired.
