Sauerkraut is the most famous German dish. The main ingredient is sauerkraut. Make a spiced sauerkraut that complements the bittersweet taste with sausages.

- - good white wine - 350 ml,
- - sour apple - 1 pc,
- - butter - 30 grams,
- - Juniper fruits (optional) - 1 tbsp. a spoon without a slide,
- - peppercorns - 1 tbsp. the spoon,
- - garlic - 2 cloves,
- - medium carrots - 1 pc,
- - broth or water,
- - sugar - 1 teaspoon,
- - salt to taste,
- - potatoes - 1 pc,
- - sausages - 4 pcs,
- - vegetable oil - 3 tbsp. spoons.
Instructions
Step 1
Peel two onions, cut in half and finely chop.
Peel the apple, remove the seeds, cut into small cubes.
Heat butter in a saucepan, add onion and apple.
Fry over medium heat. Stir periodically so that it does not burn.
Step 2
Squeeze the sauerkraut through a sieve or colander (the liquid should drain).
Transfer the cabbage to a saucepan and set over medium heat. Cooking for 10 minutes. Stir constantly so that it does not stick to the edges.
In a mortar, crush juniper berries and pepper (peas).
Add the peeled garlic cloves to the mortar. Grind well.
Step 3
Add all the contents of the mortar to the saucepan to the cabbage and mix.
Pour in wine and reduce heat to low.
Add whole peeled carrots to the cabbage.
We continue to simmer the cabbage (covered) over low heat for an hour. Make sure that there is always liquid in the pan. To do this, add a little broth or water.
Step 4
Remove the lid from the pan and take out the carrots. In this dish, it is only needed to add flavor to the cabbage. Season with a tablespoon of sugar and salt to taste. We mix.
Peel a medium-sized potato. Three raw potatoes on a fine grater, then add to the cabbage, simmer for another 10 minutes with constant stirring.
Put the finished cabbage on a dish and leave it warm.
Step 5
Heat the roasting rack or grill pan over high heat with the addition of vegetable oil.
Fry the sausages until golden brown.
Step 6
Remove the sausages from the heat as soon as they are ready.
