Ingredients for schnitzel:

  • Breadcrumbs - 2 tablespoons;
  • Flour - 2 tablespoons;
  • Pork (loin) - 400 g;
  • Vegetable oil for frying schnitzels.

Ingredients for the sauce:

  • Capers - 1 tablespoon;
  • Large thick-baked lemon - 1 piece;
  • Dried dill - 1 tablespoon;
  • Butter - 50 g.

For decoration, prepare fresh green salad leaves.

Preparation:

  1. You need to rinse and then cut into pieces (by the number of servings) the pork loin. Beat off these pieces as hard as possible, sprinkle with salt and pepper to taste. You can sprinkle the loin with seasoning for the meat.
  2. Then you need to roll portioned pieces of loin in sifted flour. After that, you need to lightly beat the egg in a deep plate. Dip a piece of loin in an egg, and then roll it in bread crumbs.
  3. Heat the sunflower oil in a frying pan, fry the schnitzel in this oil on all sides until it is cooked. Readiness should be determined by the color of the schnitzel. Has the schnitzel taken on a dark golden hue? You can take it out of the pan and put it on a plate.
  4. The next step is making a savory sauce. To do this, you need to carefully separate the zest from the body of the lemon. And then cut the zest into thin strips and fry these strips in butter heated in a pan. Add capers to the zest.
  5. Cut the remaining lemon into not very thin slices and roll in dried dill. You can also use fresh dill, but for this you need to chop it very finely.
  6. When serving schnitzels, you need to put fresh green salad leaves on a serving dish, put schnitzel on top of the salad, and a circle of lemon in dill on it, pour the prepared sauce on top of the structure. The remaining sauce can be served in a separate bowl with the dish.
