Mushroom pie is a fragrant and appetizing dish, a symbol of the beginning of autumn. Recipes for original pastries with mushrooms are present in the traditional cuisine of many nations of the world. This is largely due to the fact that mushrooms are considered meat substitutes in terms of nutritional value and can be used to prepare a wide variety of dishes - from soups to minced caviar and dumplings. In the old days, mushrooms often played the role of "meat for the poor", and people who were richer did not neglect mushrooms - after all, for example, there are many "fast" days in the Orthodox calendar; in some you can't even eat fish, and mushrooms are always welcome. In addition, mushrooms are a low-calorie product (they are 90% water, the rest is B vitamins).

    • For the pie: kefir - 1 glass (250 ml)

Instructions

Step 1

Mushrooms must be carefully washed and peeled. Especially carefully it is necessary to process oil, from the caps of which you need to remove the skin. For other mushrooms, it is enough to cut off the legs and thoroughly clean the caps (some of them can be cut off). Cut the peeled mushrooms into small pieces.

Step 2

Put mushrooms in a warm frying pan and, stirring, fry over low heat until the excess liquid evaporates. The pan should not be hot, the mushrooms should not be allowed to burn! As soon as the unnecessary water disappears, the mushrooms must be salt, add butter to them and simmer until almost cooked.

Step 3

To make the dough, stir the egg with salt with a fork, add quick soda and pour in a glass of kefir. Then you need to start adding flour - gradually, on a spoon, gently stirring each time.

Step 4

A baking dish with a diameter of about 20 cm should be greased with butter and lightly sprinkled with flour or breadcrumbs. First, pour a smaller portion of the dough into the mold. On top, you need to evenly spread the fried mushrooms. Cover this filling with the remaining dough and sprinkle with grated cheese. The cake must be baked in an oven preheated to 190 degrees.

Step 5

Mushroom pie is cooked for 40 - 60 minutes. The finished dish should be left to cool, and then cut into pieces.
