The puree soup turns out to be very delicate in consistency; various spices add a spicy aroma to it. In addition, this soup is prepared with the addition of mangoes. Such an original first course will appeal to all connoisseurs of exotic recipes.
It is necessary
- For four servings:
- - 5 pieces. parsnip;
- - 1, 2 liters of water;
- - 1 onion, 1 green chili;
- - 2 tbsp. spoons of mango, olive oil;
- - 1 tbsp. a spoonful of fresh grated ginger;
- - 1 teaspoon of ground coriander, cumin;
- - turmeric, juice of 1 lime, salt, black pepper.
- For serving:
- - yogurt, mango, croutons, cilantro, sesame seeds.
Instructions
Step 1
Peel the onion and garlic, chop. Peel the chili pepper from the seeds, chop finely, grate the ginger. In a saucepan with a thick bottom, heat the olive oil, add the previously prepared foods, cook until the onions are soft for about 5 minutes, stirring occasionally.
Step 2
Cut the parsnips into cubes, add to the saucepan, cook for another 3 minutes, stirring occasionally. Sprinkle vegetables with cumin, turmeric, coriander and cook for about 1 minute.
Step 3
Pour water into a saucepan, add diced mango pulp, pepper and salt to taste, cook for 15 minutes - the parsnips should be soft.
Step 4
Remove the pot from the stove, let the soup cool slightly, then puree it with a blender or food processor. Add the juice of 1 lime to the puree soup, heat over low heat.
Step 5
Spicy parsnip puree soup is ready, serve it warm with slices of fresh mango, croutons (you can take any croutons), any yogurt you like. On top of the finished soup, you can sprinkle chopped fresh cilantro and sesame seeds - this is not necessary, as you like.
