Ideal chocolate is cocoa mass (cocoa liquor), cocoa butter and … that's it. It is the beans of the cocoa tree that contain useful substances (antioxidants, polyphenols, vitamins) and have valuable properties, which are confirmed by nutritionists, cosmetologists and even dentists. Therefore, if these two products are the first to appear in the composition of the chocolate bar, you can "tick" - most likely, you are on the right track.

The best chocolate as a base should not contain cocoa powder (in fact, this is a waste from the processing of grated cocoa, dried cake), and even more so - substitutes for valuable cocoa butter (the most common are coconut and palm). The product becomes cheaper, and its consumer qualities are noticeably reduced. The most unpleasant thing about this is that sometimes expensive chocolate contains these undesirable components.

From a nutritional point of view, black, or bitter, chocolate is the healthiest one. The higher the percentage of cocoa (not less than 75%, and preferably from 85%), the more desirable a guest he should be on the menu. The right product contains a minimum of carbohydrates and at the same time is very satisfying due to its high fat content - a couple of slices of such chocolate are a rather nutritious snack that does not harm either the figure or the vital systems of the body.

It is advisable to store chocolate in conditions that do not allow temperature changes, otherwise it becomes covered with a bluish bloom (although this practically does not affect the taste). A quality product has a smooth matte or light sheen surface, breaks with a dry crackle, has a harmonious, slightly astringent taste. It is recommended to eat no more than a few slices a day - this amount is enough to maintain a figure, increase the level of serotonin in the blood and, most importantly, find real gourmet happiness.
