Cheese cream pies are not at all like regular pies. They are distinguished by special originality and sophistication. Cooking is not easy, but well worth the time. The specified amount of ingredients is enough for 35 pies.
It is necessary
- - flour - 400 g;
- - water - 2 glasses;
- - salt - 0.5 tsp;
- - butter - 400 g;
- - vegetable oil - 1 tablespoon;
- - eggs - 8 pcs.;
- - Roquefort cheese - 300 g;
- - hard cheese - 100 g;
- - milk 2, 5% - 1, 5 glasses;
- - potato starch - 1 tsp;
- - ground black pepper - a pinch.

Step 1
Dough preparation
Boil salted water with butter (200 g), add flour into it and, stirring, cook over low heat until the dough begins to lag behind the walls of the dishes. Chill the dough slightly and beat in all the eggs one at a time, whisking the dough continuously.
Step 2
Grease a baking sheet with vegetable oil. With a teaspoon, spread the portions of dough on it at a short distance from each other. Bake in the oven at 220 degrees for 15-20 minutes. If the dough is very browned and rose well, reduce the heat and cook the pies for another 10-15 minutes until tender. Refrigerate.
Step 3
Cream preparation
1 tsp mix flour with starch, add 0.5 cups of cold milk. Stir. Boil 1 glass of milk and, stirring occasionally, pour milk and flour into it. When the boiling mass begins to lag behind the walls of the dishes, remove from heat and cool.
Step 4
Mash the Roquefort cheese with a fork and rub with 200 g of butter. Combine gradually with the cooled mass of milk and starch. Season with salt and pepper. The cream is ready.
Step 5
Grate hard cheese.
Step 6
Cut the cooled pies on the side and fill with cream. Grease each pie with butter, dip in grated cheese and remove before serving in the refrigerator. The dish is ready! Bon Appetit!
