- - 450 g of beef liver;
- - 2 g ground nutmeg;
- - 1 carrot;
- - 120 g of lard;
- - 1/3 bunch of parsley;
- - the head of an onion;
- - a pinch of allspice;
- - Bay leaf;
- - 40 g of butter;
- - salt.
Instructions
Step 1
Wash the liver thoroughly under running water, remove veins and films, cut into small pieces. Chop the parsley.
Step 2
Cut the peeled onions and carrots into thin cubes and fry for 4 minutes along with pieces of pork fat. Then add allspice, liver and bay leaf to them. Fry all ingredients until tender, salt and stir. Remove allspice and bay leaves from the dish.
Step 3
Add the parsley to the pan and mix well. Grind the cooked liver and vegetables twice or grind with a blender.
Step 4
Transfer the liver mass to a saucepan, add the nutmeg and gradually beat in the pre-melted butter. Stir the pate well, transfer to a glass dish and refrigerate.
