It is necessary

  • - 1 cup of sugar;
  • - 800 g of cottage cheese;
  • - 300 g of chocolate chip cookies;
  • - 100 g of dark chocolate;
  • - 60 g butter;
  • - 20 g of instant coffee;
  • - 3 eggs;
  • - 2 tbsp. tablespoons of cornstarch;
  • - 1/2 teaspoon of vanilla extract.

Instructions

Step 1

Grind the chocolate chip cookies in the bowl of a blender, add the melted butter, turn on the blender for a couple more seconds - you get a damp crumb. Line a baking dish with baking paper, spread the cookie crumbs over the bottom of the dish, tamp well.

Step 2

Prepare the filling: grind the cottage cheese with sugar in a blender bowl until a homogeneous mass is formed, add eggs one at a time, beating after each. Next, send the vanilla extract with cornstarch. Turn the blender back on for a few seconds, you should have a smooth, lump-free mass. Separate 1/3 of the mass.

Step 3

Melt dark chocolate in a water bath or in a microwave oven, add it to 2/3 of the curd mass, add instant coffee there, grind until smooth and homogeneous.

Step 4

Place the chocolate mass on top of the cookie crumbs into the prepared pan. Put the white curd mass on top. Place the dish in an oven heated to 180 degrees.

Step 5

Be sure to place a container of water on the bottom shelf of the oven! Bake the chocolate-coffee cheesecake for about 1 hour. After that, put the cheesecake in the refrigerator overnight, and in the morning serve it for breakfast along with a cup of coffee, tea or a glass of milk.
