Step 1

Whisk half a glass of olive oil with six eggs, while whisking, add a glass of sugar, grated zest and juice from one orange. Add a tablespoon of finely chopped thyme. Alternatively, you can rotate it in the grinder for a few seconds.

Step 2

Stir the mixture well, add a glass of polenta and one and a half cups of pancake flour, half a teaspoon of baking soda or baking powder, and a quarter teaspoon of salt. Knead the dough until smooth, then place in a greased muffin tin and bake in the oven at 180 degrees for 35 minutes. Please note that the form should be deep, a few centimeters of its sides should remain above the surface of the cake.

While the cake is baking, prepare the syrup to soak it. Take the juice from two large oranges - you get about two glasses, the juice of one lemon and one hundred grams of sugar (four full tablespoons or just under half a glass). Bring the mixture to a low boil, stirring occasionally, and remove from the heat.

The readiness of the cake is determined in the traditional way - you need to pierce it with a toothpick. If it stays clean, the cake is ready. As a rule, this is needed only during the first preparation, later you will bake the cake using the familiar technology, knowing the temperature and baking time, so you will not have to control its readiness.

After removing the cake from the oven, leave it in the mold. Use a toothpick to thickly prick it on top almost to the full depth, at this stage you will also be able to evaluate the quality of the baking. Then pour the syrup over the cupcake and leave to soak. After it has cooled, remove the muffins from their molds and garnish with a frosting of beaten egg white, lemon juice and sugar. You can also sprinkle it with grated orange zest on top.

You can change the base recipe as you see fit. For example, decorate the cake with chocolate icing, for this, melt 200 grams of chocolate with 100 grams of butter in a water bath, add a tablespoon of cocoa powder. Decorate an already cooled cake with icing. The cake can be sprinkled with ground nuts, raisins, etc. etc. You can do without polenta by using only pancake flour.
