An exquisite treat - cookies-boxes, decorated with bright dragees, will harmoniously look both on the Easter table, and are perfect for a garden party, tea party or any spring holiday.

- - 1 egg;
- - 1 cup of sugar;
- - 1 teaspoon baking powder;
- 1 cup (2 sticks) unsalted butter
- - 1 teaspoon of vanilla extract.
- For royal icing:
- - 4 tablespoons of meringue powder;
- - 100 g of warm water;
- - 560 g of icing sugar.
- For royal icing (from proteins):
- - 2 egg whites;
- - 2 teaspoons of lemon juice;
- - 330 g icing sugar.
Instructions
Step 1
In a medium bowl, stir together the flour and baking powder. In a mixer, beat the softened butter and sugar using paddles until light and fluffy. The procedure should take about 3 minutes.
Step 2
Add the egg, vanilla to the butter mass, beat for another minute. Next, add the flour mixture in portions, constantly stirring the dough with a mixer until smooth, until it starts to move away from the edges of the bowl.
Step 3
After removing the dough from the bowl, place it on a piece of parchment paper. Knead the dough with your hands. Place the dough in a large plastic bag or cover with cling film and place it in the freezer for 20-30 minutes. You can store it in the refrigerator for about 2 days.
Step 4
Preheat the oven to 350 ° C degrees. Set aside about half of the chilled dough. Place parchment paper on top of it, which will process the dough without additional dusting with flour.
Step 5
Roll out into a layer about 10 mm thick. Using a mold (2.5 cm in diameter), cut out the blanks. For each finished "box" you need 4 cookies. One batch of dough will make about 5 ready-made boxes.
Step 6
Bake the cookies whole without cutting out the center. After the cookies are baked while they are still hot, cut out the center piece using a 1.75cm diameter mold, but do not remove it.
Step 7
Let the baked goods cool for a minute or two on a baking sheet. Then, using a spatula, gently transfer the cookies, along with the intact cutout, to the chilled racks. Once the cookie has cooled completely, remove the inner circle.
Step 8
Prepare the royal icing by stirring all the ingredients until fluffy. Add colorings as desired. Add liquid as much as necessary until you reach the desired consistency.
Step 9
The glaze should be thick enough so that it does not run off the edges, but the layer should be thin enough. Collect the boxes. First, put a whole cookie (no notch), which will serve as the bottom, then 2 rings, and cover the top with a whole disc - a lid.
Step 10
Decorate the cookies. Paint the outline of the disc with a light blue glaze, and then fill the entire surface with light blue (or color of your choice). Let dry completely, at least 4-8 hours.
Step 11
Prepare jellied pills for the tops of the "boxes" by cutting them lengthwise (for leaves) or across (for flowers) depending on the pattern.
Step 12
On the glazed surface of the cookie, glue each "petal" and "leaf" with a drop of glaze. To complete the look, draw a dotted line around the edge of the circle with white icing.
