The Italian dessert Semifredo is a soft ice cream that resembles an airy soufflé. This dessert is made with various additives, we propose to create a delicacy with honey, dried fruits and vanilla in nutmeg wine.
It is necessary
- - 600 ml of heavy cream;
- - 400 g of dried fruits;
- - 375 ml of fortified nutmeg wine;
- - 230 g of honey;
- - 220 g of powdered sugar;
- - 80 g of honeycomb;
- - 8 egg yolks;
- - half a vanilla pod.
Instructions
Step 1
Melt the honey, bring to a boil. Beat the egg yolks with a mixer. Slowly pour boiling honey into them without turning off the mixer. Beat for seven minutes, until light and thick. Refrigerate the mixture.
Step 2
Whip the cream with vanilla seeds until fluffy, add to the honey mixture, add coarsely chopped honeycomb.
Step 3
Lay out a convenient container with cling film, pour the mass into it, cover the top with plastic wrap too. Put in the freezer overnight. Dip the dish in hot water before serving, then turn the dessert onto a plate. Serve with fruit and wine.

The fruit for this dessert is easy to prepare. Put a saucepan with wine, vanilla, powdered sugar and half a glass of water over medium heat, bring to a boil, the sugar should dissolve. Add dried fruits, cook for about 20 minutes until they are soft, then remove the fruits with a slotted spoon. Increase the heat, boil the remaining liquid for 10 minutes, you get a syrup, pour it over the fruit, cool. In a closed container, fruits in syrup are stored in the refrigerator for up to 4 weeks, the Semifredo dessert itself in the freezer for up to 2 weeks.
