It is necessary

    • 8 medium potatoes;
    • 200 g tofu;
    • 100 g of emmental cheese;
    • 1 egg;
    • a bunch of greens;
    • salt and pepper.
    • For the second filling:
    • 200 g tofu;
    • 150 g chicken fillet;
    • 1 bell pepper;
    • dried provencal herbs;
    • grated parmesan;
    • salt and pepper.

Step 1

Wash the potatoes and boil them right in the peel in salted water until half cooked - the tuber should remain dense. For this dish, it is advisable to choose varieties that are not overcooked. Remove the potatoes from the water and refrigerate, then pat dry with a towel. Cut the tubers in half, remove some of the pulp so that the remaining potato retains its shape. Place the pulp in a bowl and mash with a fork until puree.

Step 2

Take care of the stuffing. Cut the tofu into small cubes and add to the puree. Cheese, for example, emmental, grate on a coarse grater, add most of it to the rest of the products. Chop the herbs and add to the puree. Break an egg there, salt and pepper the mass, then mix thoroughly. To add a special taste, you can use paprika, not black pepper. Fill the potato with the filling, top with some of the remaining grated cheese.

Step 3

Preheat oven to 180 degrees. Place the potato halves with the filling facing up on a greased baking sheet. Bake the dish briefly, just a few minutes before the cheese melts. Serve hot. A salad of fresh tomatoes and herbs with vegetable oil is well suited to such potatoes. It is advisable to serve sour cream as a sauce for an appetizer.

Prepare a different kind of filling. To do this, boil the chicken breast until tender and chop finely. Combine it with finely chopped or minced tofu. Cut the bell pepper into thin strips and fry in hot vegetable oil for 3-4 minutes. Add it to chicken and tofu. Season the mixture with salt and pepper, add dried Provencal herbs. Fill the potato "boxes" prepared according to the first recipe with the filling. Sprinkle a little grated Parmesan on top of each. Bake in a preheated oven for 5-7 minutes.
