Zucchini dishes are not only an optimal side dish for meat and fish, but are also suitable for daily consumption within a variety of healthy nutrition systems. In combination with tofu cheese, the zucchini ragout acquires additional exquisite flavor notes.
It is necessary
- –1-2 fresh zucchini;
- - half a large carrot;
- –120 g of fresh tofu cheese;
- -vegetable oil;
- –1-2 tbsp. soy sauce;
- –0.5 tsp. balsamic vinegar;
- - a clove of garlic.
Instructions
Step 1
Take zucchini, wash thoroughly, cut 1-2 centimeters from the sides with a sharp knife. Cut the vegetables into equal pieces without removing the thin skin and place in a bowl. Chop the carrots on a grater and transfer to the same bowl as the zucchini. Drizzle with balsamic vinegar and stir.
Step 2
Heat a skillet with oil to medium heat and add vegetables. Cook for 2-6 minutes, stirring constantly with a wooden spatula. As soon as the zucchini begins to turn clear, do not forget to pour in the soy sauce and simmer for a few more minutes under the lid.
Step 3
Gently cut the tofu into cubes and add to the courgette stew. Keep the cheese soft. This will make the dish especially tender. Chop the garlic and sprinkle the vegetables with the tofu. Leave to infuse.
