There are many variations of the hodgepodge. But the most popular of all is the mixed hodgepodge, to which various meat products are added. An indispensable component of such a soup is smoked meats. Try adding some smoked chicken to the traditional recipe. For cooking, take the whole bird whole - the bones will add richness to the broth.
It is necessary
-
- 1 small smoked chicken;
- 1 small beef marrow;
- 300 g of meat products (sausages
- ham
- boiled meat);
- 2 onions;
- 200 g of pickled cucumbers;
- 0.5 cups tomato paste;
- salt;
- vegetable oil for frying;
- black peppercorns;
- Bay leaf;
- lemon;
- 100 g pitted olives;
- 50 g capers;
- parsley and dill.
Instructions
Step 1
Prepare a meat set for the hodgepodge. In addition to chicken, you will need boiled or smoked meat, ham, sausages or smoked sausages and other meat products if desired. Cut them into small pieces. Remove the skin from the chicken and cut the meat, chop it and combine with the rest of the meat set.
Step 2
Fold the chicken bones into a saucepan, add the sugar beef bone, crushed lengthwise. Cover with hot water and bring to a boil. Remove the foam formed on the surface, reduce the heat under the pan, add peppercorns and bay leaves. Cook for 2-3 hours. Remove foam as it forms with a slotted spoon. If the finished broth does not seem transparent enough to you, you can strain it by first removing the bones from it.
Step 3
Chop the onion into thin rings. Heat vegetable oil in a skillet and sauté the onion until golden brown, stirring constantly with a wooden spatula. Add tomato paste to the skillet and continue frying. Peel pickled cucumbers from skin and seeds, cut into slices. Place them in another skillet and sauté in a little broth for 5-7 minutes.
Step 4
Put cucumbers and onions fried in tomato sauce in a saucepan with broth. Add the meat set, smoked chicken and salt. Bring the hodgepodge to a boil. Boil the soup for 5-7 minutes, turn off the heat and let it brew under a closed lid. Try a ready-made dish - if the taste doesn't seem to you rich enough, add a little freshly squeezed lemon juice to it. Salt the soup as needed.
Step 5
Cut the lemon into slices, remove the peel and seeds. Chop the parsley and dill finely, cut the olives into slices. Place herbs, olives and capers in a saucepan. Pour the hodgepodge into warmed plates, add half a mug of lemon to each. Serve with sour cream.
