Potato salads are very tasty, they often serve as a side dish for meat dishes. This salad is made from young potatoes with the addition of blue cheese - a very original taste is obtained.
It is necessary
- - 800 g of young potatoes;
- - 1 onion;
- - 100 g of blue cheese;
- - 2 tbsp. tablespoons of olive oil, balsamic vinegar;
- - 1 tbsp. a spoonful of grain mustard;
- - salt, ground pepper, dill.
Instructions
Step 1
Rinse the potatoes, boil until tender, without peeling them. Young potatoes can be used for skinned salads.
Step 2
Peel the onion, chop finely. In a convenient bowl, combine balsamic vinegar with onions, olive oil, mustard, and salt. Pepper the resulting salad dressing to taste.
Step 3
Cut the hot potatoes into 2-4 pieces, depending on their size. You can add small potatoes whole - it will be more beautiful.
Step 4
Place the potatoes in the salad dressing, stir gently, being careful not to damage the potatoes. Cover the dishes with a lid, leave at room temperature to infuse for half an hour.
Step 5
Crumble the blue cheese, you can cut into small cubes - whichever is more convenient. Add to potatoes, mix gently again. Decorate the prepared salad with fresh dill sprigs and serve immediately.
