Parfait is a French cold dessert. It is made from cream, whipped with sugar and vanilla, eggs, berries and fruits. I suggest you try making a strawberry-raspberry parfait. The dish is prepared simply. The specified amount of food is enough for 4 servings.

- - raspberries - 300 g;
- - eggs - 5 pcs.;
- - mint - 10 branches;
- - sugar - 100 g;
- - cream 25-33% - 300 ml;
- - vanilla sugar - 1 tsp
Instructions
Step 1
Preparation of berries. Sort out the strawberries and raspberries, remove the stalks from the strawberries, rinse with water. Pat the berries dry with a paper towel. Leave 5-6 berries for decoration, chop the rest of the berries with a blender until puree.
Step 2
Combine sugar and vanilla sugar. In a coffee grinder, turn sugar into powdered sugar.
Step 3
Divide the eggs into yolks and whites (only yolks are needed). Beat the yolks with a mixer, add the icing sugar, mix. Place the yolk-sugar mixture in a water bath, whisk the mixture constantly. Once thick, remove from heat and cool to room temperature.
Step 4
Rinse the mint with water and chop very finely. Whisk the cream into a lather.
Step 5
Combine the yolk-sugar mass with berry puree, chopped mint and whipped cream. Stir.
Step 6
Take one large mold (or several small molds), line it with cling film and spread the berry mixture evenly. Refrigerate dessert for 10 hours. After the dessert has hardened, remove it from the mold, cut into portions, garnish with fresh berries and mint leaves. The berry parfait is ready!
