Parfait is considered one of the favorite cold desserts in French cuisine. The dish is prepared quite easily and just melts in the mouth. As a rule, fresh berries are used as a filling in summer, and in winter the dessert can be supplemented with any fruit.
It is necessary
- - orange juice (4-5 tablespoons);
- –Sugar (70 g);
- - egg yolks (4-5 pcs);
- –Vanillin (3 g);
- –Fresh raspberries (270 g);
- –Fresh peaches (1-2 pieces);
- –Raspberry jam or preserves (260 g);
- –Chocolate shavings (70 g);
- –Fat cream (470 ml).
Instructions
Step 1
Rinse the peaches thoroughly, make cross-shaped cuts on the skin and place in boiling water. Wait a few minutes and then peel off the skin with a knife. Chop the peach pulp into small, free-form pieces.
Step 2
Break the eggs into a bowl, separate the yolks. Place the saucepan in a water bath, add the yolks and beat for 5-8 minutes, adding vanillin, sugar and orange juice.
Step 3
Remove the saucepan from the water bath, place it in a bowl, into which you should first pour cold water and beat the resulting mass until it cools completely.
Step 4
In a separate cup, whip the cream with a mixer. Add cream to the yolks, orange juice and vanillin mixture. Stir.
Step 5
Add peaches, raspberries and chocolate chips. Mix thoroughly again. The next step is pouring the parfait into the mold. For this, a rectangular silicone mold is ideal, which must be lined with cling film.
Step 6
Next, gently pour the creamy mass into the mold, and then shake it a little. This should be done so that the mass is evenly distributed and there are no voids in the dessert.
Step 7
Place the parfait in the freezer for 10-15 hours. Dip the pan in hot water for a couple of seconds before serving. This will quickly separate the parfait from the mold. Flip the dessert onto a platter and garnish with raspberries on top.
