Raspberry parfait is a French cuisine dish. The word "parfait" is translated from French as beautiful, impeccable. You can add ice cream, cream to the parfait, and use coffee, cocoa and fruit puree as a taste.

- - 5 tbsp. l. orange juice
- - 1 bag of vanillin
- - 100 g granulated sugar
- - 300 g raspberries
- - 4 egg yolks
- - 2 peaches
- - 270 g raspberry jam
- - 500 ml cream
- - 100 g of chocolate chips
Instructions
Step 1
First, take and rinse the peaches well, then cut the peels crosswise. Place in boiling water for 10-20 seconds. Peel off.
Step 2
Finely chop the peach flesh. Sort out the raspberries. Whisk the yolks in a saucepan in a hot water bath with vanilla, orange juice and granulated sugar, about 5-7 minutes.
Step 3
Pour the mixture into a bowl and place in cold water. Continue whisking until the mixture has cooled.
Step 4
Stir in the jam, berries, fruit and chocolate chips.
Step 5
Pour into a baking dish and refrigerate overnight.
Step 6
10 minutes before serving, dip the pan in hot water for 5 seconds and tip over onto a platter. Garnish the parfait with raspberries on top and serve.
