Exotic Fruit Salad Recipe

Papaya is a frequent ingredient in fruit salads, in which exotic fruits are surprisingly harmoniously combined with hot herbs and spices. For a recipe for one of these cold savory dishes, you will need the following ingredients:

- papaya (2 small fruits);

- avocado (1 pc.);

- mango (1 piece);

- freshly squeezed lemon juice (2 tablespoons);

- olive oil (3 tablespoons);

- granulated sugar (1 teaspoon);

- chili (1 pod);

- Dijon mustard (1 teaspoon);

- table salt and freshly ground black pepper to taste.

Rinse fruit thoroughly, peel and pitted, cut into slices. Sprinkle them with a little freshly squeezed lemon juice to keep the flesh from darkening. Peel the chili pepper and chop very finely. For dressing, whisk citrus juice, refined olive oil, granulated sugar, mustard, table salt and pepper (ground and chili) with a broom.

Place the salad in a serving dish, top with the resulting dressing mixture and garnish with papaya seeds. A cold dish should be eaten immediately after preparation.

To dress the papaya salad, it is important to use sweet spiced mustard, for example, Bavarian with caramel flavor or Russian, such as Ogorodnikov, Paterson.

Papaya sauce for chicken skewers

An unusual taste and rich bouquet of aromas will add a spicy sauce to chicken kebabs, one of the ingredients of which will be exotic papaya. Before you start making the gravy, marinate 0.5 kg fillets in this mixture:

- 9% table vinegar (2 tablespoons);

- freshly squeezed lemon juice (1 tablespoon);

- sesame oil (2 tablespoons);

- grated garlic (1 teaspoon);

- chopped ginger (1 teaspoon).

The meat slices should be completely marinated. Place the chicken breasts in the refrigerator compartment for 1 hour and soak in the spicy flavors and start with the kebab sauce. For the gravy, take:

- refined olive oil (0.5 tablespoons);

- onion (2 pcs.);

- curry powder (2.5 g);

- papaya (1 medium fruit);

- lemon juice (2 tablespoons);

- greens of dill, parsley and basil (1-2 branches each);

- table salt to taste.

To make a sauce or salad, buy a ripe papaya - it crumbles when pressed. If the fruits are not ripe, it is recommended to keep them at room temperature until softened. The most delicious are variegated fruits.

Heat the oil in a heavy-bottomed skillet, then sauté the chopped onion and grated ginger in it for 5-7 minutes. Add the curry powder to the skillet and fry all the ingredients for another minute. Place the sautéer in a blender bowl, add the rest of the sauce and chop.

Cook the grilled marinated chicken fillet kebab (4-5 minutes on each side) and serve the cooked hot dish with warm or chilled sauce.
