White chocolate is not commonly used in cooking. A much more common ingredient is its dark cousin, as it melts better and is much more familiar to sweet lovers. But white chocolate paired with cream cheese and raspberries is also very good.

    • 600 g flour;
    • 400 g margarine;
    • 200 g of sugar.
    • For filling:
    • 500 g mascarpone cheese;
    • 300 g raspberries
    • fresh or frozen;
    • 100 g sugar;
    • 100 g chopped almonds;
    • 100 g of white chocolate;
    • 2 eggs.

Instructions

Step 1

Make shortbread dough. To do this, mix the sugar, margarine and flour thoroughly in a 1: 2: 3 ratio. That is, if you take 200 g of sugar, then you need 400 g of margarine and 600 g of flour. Add a pinch of salt and some cocoa and knead the dough thoroughly. For the recipe, you can use purchased shortbread dough or yeast-free puff pastry.

Step 2

Take about 400 g of ready-made shortcrust pastry. Roll out thinly to the size of the pan in which you will make the casserole. Grease the pan with butter or margarine, place the dough there. Top with parchment paper and dry beans or peas to keep the dough from swelling. Preheat the oven to 160 degrees, place the baking dish there and bake the dough for 10 minutes. Then remove the peas and continue baking for another 5 minutes. You can make a similar dessert in the form of tartlets, then you will need many small molds, cover each with paper, pierce the dough with a toothpick in several places.

Step 3

Use a blender to blend the mascarpone cheese (or any other soft cream cheese), eggs, almonds and sugar until smooth and creamy.

Step 4

Melt the chocolate in a water bath or microwave, let cool slightly. Add raspberries to the chocolate and mix it all with the cheese mass. Then pour the mixture into the baked dough pan and continue baking for another 25-30 minutes, until the filling acquires a light golden hue.

Step 5

Serve chilled. You can garnish it with whole raspberries and mint leaves. Top with whipped cream or ice cream. By the way, in addition to raspberries in this recipe, you can use any berries or fruits, and white chocolate is replaced with black without much loss, but then it is better to put more sugar.
