First you need to put a glass of water in the freezer, later you will need ice water to prepare the filling.

Egg and salt are diluted in a small glass of water (or in a regular one, but not full), beat with a blender or whisk until smooth. Sifted flour is added in portions. Elastic dough is kneaded. Rolls into a ball, covered with a lid or foil and left to rest at room temperature for an hour and a half.

Step 3

The onion is chopped in any convenient way. A blender, a meat grinder, and an ordinary familiar knife will do. Greens are also finely chopped. Moreover, not only dill and parsley can be taken from greens, your favorite spicy herbs in moderation will also be appropriate.

The minced meat (cooked independently or purchased in the store) is mixed with onions and herbs, salted, peppered and mixed. Immediately before spreading the filling into the flat cakes, pour a glass of ice water into the minced meat and mix thoroughly again. The icy water will keep the filling juicy while frying.

Divide the rested dough into several equal parts. We roll each part into the thinnest possible layer - when forming and frying the cakes, the minced meat should shine through the dough. Each layer is cut into approximately the same rectangles.

On each rectangle, a couple of tablespoons of minced meat filling is laid out for one half. The filling is covered with the other half of the rectangle and the edges are gently pinched.

A good amount of vegetable oil is heated over medium heat. Cakes are fried until browned on both sides. Finished cakes are laid out on a paper towel to get rid of excess vegetable oil. Ready-made tortillas are decorated with greens. Sprinkle with chopped garlic at will and taste.
