Ingredients for sorbet:

  • black currant - 250 g;
  • icing sugar - 100 g;
  • water - 100 g;
  • butter - 1 tablespoon;
  • chicken eggs - 2 pcs;
  • flour - 1 tablespoon

Ingredients for baskets:

  • butter - 60 g;
  • egg whites - 2 pcs;
  • icing sugar - 100 g;
  • almond essence - 2 drops;
  • flour - 50 g;
  • ground almonds - 1 tsp;
  • ½ tsp vanilla essence.

Preparation:

  1. First you need to prepare the sorbet. Mix water and sugar and boil for 5 minutes. Stir without interruption and wait until the sugar is completely dissolved. Cool the resulting mixture.
  2. Next, use a food processor or blender to cook black currant puree.
  3. Mix currant puree with sugar syrup and place in the freezer for an hour or an hour and a half. The mixture should freeze by half.
  4. Beat the egg whites until elastic peaks are formed. Add 1 tablespoon of sugar. Add the resulting mixture to the semi-frozen berry puree and beat.
  5. Put the mixture back in the freezer and leave for two hours. During this time, the mixture must be removed periodically and mixed thoroughly. This is necessary for the sherbet to be uniform.
  6. While the sorbet is in the freezer, start making the baskets. To do this, preheat the stove to a temperature of 170 degrees. Grease a baking sheet with butter and sprinkle with flour. Stir in sugar and butter. Then add and mix all the rest of the dough ingredients.
  7. Put the prepared mixture on a baking sheet (if everything does not fit at once, then repeat the procedure) and spread in the form of circles with a diameter of 9-10 centimeters. Bake the tortillas for 10 minutes. They should turn rosy. Next, form the baskets. Lay the still warm circles on inverted glasses and squeeze, giving the shape of baskets. Cool without removing the baskets from the glasses. If the basket does not work out the first time, you need to warm up the circle and try again.
  8. Take sorbet out of the fridge and place in baskets. It should be noted that you need to get the sorbet right before serving, otherwise it will melt.
