Mandarins are rightfully considered the main symbol of winter holidays. If you still don't know what to bake with these wonderful fruits, then try making a muffin. You will get a delicious, tender and very aromatic treat.

It is necessary

  • - flour - 1 cup (130 g);
  • - finely ground granulated sugar - 130 g + 1 tsp;
  • - butter - 170 g;
  • - chicken eggs - 3 pcs.;
  • - baking powder - 1 sachet;
  • - tangerines - 2 pcs.;
  • - orange - 1 pc.;
  • - raisins (you can take dried apricots or a mixture of dried fruits) - 150 g;
  • - icing sugar;
  • - zest of one lemon (optional);
  • - chocolate syrup (optional);
  • - rosemary - 1-2 branches (optional).

Instructions

Step 1

Before making the cake, remove the butter from the refrigerator and leave it on the table to soften. Peel the tangerines, divide into wedges and leave on a plate so that the film dries slightly. Pour raisins (or other dried fruits) into a small bowl. Squeeze 2 tablespoons of juice from the orange. Pour it over the raisins and leave to soak for half an hour.

Step 2

Grind 150 g of softened butter with sugar to form a homogeneous mass. In this case, it is most convenient to use a mixer. While beating, add the eggs one at a time. Put the next one only after the previous one has been beaten.

Step 3

In a separate bowl, combine the flour and baking powder. Then pour this mixture over the beaten eggs and butter and sugar. Beat with a mixer, reducing the speed to a minimum. The muffin dough is ready, set it aside until we start making the filling.

Step 4

Take a frying pan and heat it up a little. Then put the remaining piece of butter in it, melt it. Add the tangerine wedges to the skillet and fry them on both sides for a couple of minutes.

Step 5

After that, put the tangerines in a separate plate, and pour the raisins into the pan with the orange juice. Reduce the temperature to medium and simmer the raisins until all the juice has evaporated. After that, remove the pan from the stove, cool the raisins and transfer them to the dough, stirring gently.

Step 6

Turn on the oven and set the temperature to 180 degrees. Take a baking dish and grease it with any oil. Pour in one third of the dough and place a few tangerine slices on top. Pour the second part of the dough, put the wedges back. And complete the formation of the future cupcake by pouring in the last part of the dough and adding a few more wedges. Send the workpiece to the oven for 1 hour.

Step 7

When the time is up, remove the baked goods from the oven and cool. Then garnish with powdered sugar, lemon zest and / or pour over chocolate syrup (optional). Arrange the remaining tangerine wedges and rosemary sprigs on top. The cupcake is ready! It can be served immediately.
