As a rule, Easter cake appears on the festive table on the bright holiday of Easter. Each housewife bakes it according to a proven, favorite recipe. Change your rules and try a different way of making this traditional product - with almonds.

- 1 kg of flour;
- 0.5 liters of milk;
- 6 eggs;
- 50 g fresh yeast;
- 300 g butter;
- 1 cup of sugar;
- 200 g of peeled almonds;
- 1 glass of candied fruits;
- 1 lemon;
- a pinch of salt.
Instructions
Step 1
Boil the milk and then refrigerate it to room temperature. Dissolve the yeast in a small amount of milk in a separate container, adding salt and one spoonful of granulated sugar. Cover with a towel and place in a warm place. Pour the remaining milk into a large bowl, add flour, add frothed yeast, stir and cover with a towel. Send the bowl back to a warm, draft-free place.
Step 2
While the dough is working, prepare the rest of the ingredients. Separate the egg whites from the yolks. Mash five yolks with the remaining sugar until white, using a mixer or a whisk, beat all the whites. Melt the butter in the microwave or on the stove and cool to room temperature. Scald the lemon with boiling water and remove the zest. Grind the almonds in a blender or mortar. Add whipped yolks, butter, grated lemon zest, almonds, a glass of candied fruit to the risen dough and, last of all, gently add the whipped whites into the foam. Mix everything and knead the dough well on a floured table.
Step 3
From the proposed number of products, you can get several cakes: how much depends on the size of the baking dish. Brush them with butter and sprinkle with a little flour. Spread out the dough, filling the forms in one third, cover with a towel. When the dough rises flush with the edges, brush the surface with whipped yolk and send the cakes to the oven, preheated to 180 degrees. Bake at this temperature until tender. You can check it by piercing the product with a wooden stick, for example, a toothpick. If the dough is baked, it should be dry. When the cakes are cold, remove them from the molds and decorate with melted chocolate or protein icing to your taste.
