Step 1
Choose the right piece of pork. For example, the neck will do. The meat should not be too fatty. It is best to purchase it chilled, but frozen is also acceptable.
Step 2
Cut the pork into slices about a centimeter thick. Beat off the meat, sprinkle with salt and pepper. Heat vegetable oil in a skillet and fry the slices for four to five minutes on each side until half cooked.
Step 3
Prepare the vegetable cap. Peel potatoes and cut into very thin plastics. Grate the zucchini on a coarse grater. Peel and chop the garlic. Place the meat on a greased baking sheet. Place some garlic on top of each steak, then grated zucchini and potatoes. Season with salt and pepper. On top, you can sprinkle the meat with a mixture of Provencal herbs and grated cheese. Place the sheet in an oven preheated to 180 degrees. Bake the dish for about twenty minutes.
Step 4
You can also cook pork with tomatoes. In this case, it is advisable to bake the meat for ten minutes without a hat, and then remove, put tomato slices and cheese on top and put in the oven for another 10 minutes. Eggplant can also be a tasty addition to meat. They also need to be pre-fried for three to four minutes. Oils should be taken very little, as eggplants absorb it very easily.
Step 5
Bake the meat without pre-frying. In this case, it should be greased with vegetable oil before being sent to the oven and the heat treatment time should be increased by 10 minutes.
Step 6
Serve the pork with a side dish. Green beans, first boiled in salted water and then fried with a little oil, are well suited to such meat. The best accompaniment will be dry red or rose wine.
