The Estonian national cuisine is based on simple but very satisfying dishes of meat, fish, vegetables and bread. Many are reminiscent of peasant treats in their simplicity. One of the traditional Estonian dishes is beer soup.
It is necessary
- - Light beer 500 ml
- - Sour cream 20% 200 g
- - Egg yolk 2 pcs
- - Hard grated cheese 250 g
- - Sugar 2 tsp
- - Slice of bread
- - 3 garlic cloves
- - Greens, pepper at will
- - Salt to taste
Instructions
Step 1
Mash the yolks with sugar and salt. Add sour cream to this mixture, then whisk the composition into a mass of uniform consistency. Boil the beer in an enamel saucepan, then remove from heat, dilute a mixture of yolk and sour cream in it, add grated cheese.
Step 2
Reheat the mixture over low heat, remembering to stir occasionally, but do not boil. Cut the bread into small cubes, sprinkle with salt, and dry in the oven. Quickly sprinkle hot croutons with chopped herbs and crushed garlic.
Step 3
Serve the soup to the table in a deep plate, putting a few pieces of croutons in it.
