For the sauce, dissolve 30 g of butter in a small saucepan, add 150 g of sugar and keep on low heat until a soft golden caramel is formed.

Then pour in 50 ml of hot water and bring to a boil. Cook for 2 minutes. Then add the cream and cook for another 2 minutes. Let cool.

Pour water into a large dish 1/3 of the height and place in an oven heated to 180 degrees.

Brush a small dish with the remaining butter and pour 2 tablespoons of the prepared caramel sauce on the bottom.

Beat the egg whites well with a mixer with the remaining sugar until a strong foam is obtained. Without stopping whipping, gradually, in a thin stream, add caramel sauce to the protein mass.

Transfer to a small dish, place it in a large one with water and keep in the oven for 10 minutes.
