Tolma is a national Azerbaijani dish. It is mainly made from grape leaves. Tolma will become a signature dish of any festive table. The cooking time is only 40 minutes.
It is necessary
- -60 grape leaves
- -1 tbsp. rice
- -1 onions
- -raisins
- -soy sauce
- -3 tbsp. l. tomato paste
- -vegetable oil
- -sugar
- -black pepper to taste
- - salt
- - a pinch of ground coriander
- - one bunch of dry basil
Instructions
Step 1
First you need to boil the rice until half cooked (without salt).
Step 2
When the rice is ready add soy sauce, black pepper, coriander, raisins, basil.
Step 3
Peel the onion and chop finely, fry half in a pan with vegetable oil until golden brown. Add two tablespoons of tomato paste, a pinch of sugar, rice to the onion and mix everything thoroughly. Pass for a few more minutes.
Step 4
Rinse the grape leaves, put in a saucepan and boil on the stove until soft. After they are cooked, remove from the pan and cool.
Step 5
Take a cooled grape leaf and place the filling on top of it. Form into an envelope.
Step 6
In the meantime, prepare the sauce. Fry onions with tomato paste, adding water. Put the envelopes in this sauce and simmer for about 15 minutes.
