Pilaf has long ceased to be a dish of only Uzbek cuisine. It is cooked everywhere. There are many recipes for delicious pilaf. Someone replaces mutton with chicken, someone puts beans instead of meat. Vegetable pilaf with mushrooms is an excellent summer option.

Step 1
The preparation of pilaf begins with the preparation of rice. For pilaf, Uzbek rice devzira is best suited. But if not, use brown, wild or long grain rice. Boil water. Sort the rice, rinse well with cold water. Place the rice in a container, pour boiling water over and leave under the lid for 1 hour to allow the grains to absorb the water.
Step 2
While the rice is boiling, you need to prepare the frying and mushrooms. Peel the carrots and onions. Grate the carrots on a coarse grater, finely chop the onion. Send vegetables to the skillet. First, carrots, cooking time is about 10 minutes. Add the onion after 5 minutes, it cooks quickly. Transfer the finished frying to a plate.
Step 3
Prepare the mushrooms. If you use woodland, they should be boiled beforehand, then fried. If you want to cook mushrooms or oyster mushrooms, you can fry them right away. Wash the mushrooms, cut into plates. Place in a skillet and simmer under the lid. Transfer the finished mushrooms to a plate.
Step 4
All ingredients for pilaf are ready. Put mushrooms in a saucepan with a thick bottom or cauldron, then onions and carrots, rice on top. Products must be poured with boiling water to the top of the rice, but no more. The water should show only slightly over the grains. Light a fire. Cook, covered, for about 40 minutes over low heat, so that the water is completely gone.
Step 5
Sprinkle the rice with spices and salt to cover the entire surface. Don't forget to add the barberry berries. They will add spice to the dish. Leave the pilaf to cook for another 5 minutes.
Step 6
Turn off the fire. Stir the pilaf to mix the rice, mushrooms, roast and spices evenly. Make a couple of cuts in the dish and leave it open so that steam and moisture evaporate completely and the rice is crumbly.
Step 7
If you wish, you can add other vegetables to the pilaf. For example, bell pepper. It should be prepared along with carrots and onions. Mushrooms can be replaced with beans. You can use ready-made or pre-boil it. You can also experiment with cereals. Try buckwheat or bulgur instead of rice. Vegetable pilaf with mushrooms, cooked without oil, is an excellent dietary dish with good taste and nutritional properties.
