Step 1
Turn the oven on at 210 ° C. Peel one small pineapple (you can take half of the large one) as follows: cut off the top and the opposite side with a sharp knife. Cut the pineapple in half and peel from top to bottom with a knife. Cut out the core. Cut each half in half lengthwise and chop into slices about a centimeter thick. Put the chopped pineapple in a bowl, sprinkle with spices: half a teaspoon each ground sweet red pepper, ginger and coriander. Stir well and set aside for ten minutes.
Step 2
Take 600 grams of pork tenderloin or loin. Rinse thoroughly, towel dry and cut into six equal pieces about a centimeter thick. Using a sharp knife, carefully make a deep longitudinal cut in each piece to form a pocket. Rub the pieces of pork with salt. Put two pineapple slices in each pocket (leave a few slices - they will be needed for the sauce). Pour half a tablespoon of olive oil into a frying pan, heat and put the pieces of pork with pineapple there. Fry over medium heat on both sides until golden brown. Remove from heat and transfer to a fireproof mold.
Step 3
Transfer the remaining pineapple slices to a blender bowl, add five tablespoons of olive oil, some pepper, salt, ground coriander and ginger. Beat until smooth and smooth. Pour the pork with the resulting sauce, put fresh sage leaves on top and bake in the oven for half an hour.
Step 4
10 minutes before the end of cooking, carefully remove the dish from the oven, cover the meat with foil and put it back on to bake. Remove the cooked pork from the oven and leave it under the foil for another 5-10 minutes. This juicy dish can be served with pilaf or any other side dish.
