It is necessary
- Ingredients for 6-8 persons:
- - 300 g of pearl barley;
- - medium sized butternut squash;
- - 2 tablespoons of olive oil;
- - 300 g broccoli;
- - 75 g of pine nuts;
- - 100 g blueberries.
- For refueling:
- - 150 ml of olive oil;
- - 50 ml of raspberry vinegar;
- - a tablespoon of liquid honey;
- - salt and pepper.
Instructions
Step 1
Boil the pearl barley according to the instructions on the package until tender, put it in a colander, put it aside.
Step 2
Preheat the oven to 180C. Cut the pumpkin into slices 1 centimeter thick, salt, pepper, sprinkle with olive oil and put on a baking sheet. Bake for 30-35 minutes, set aside. Put pine nuts on a baking sheet, bake in the oven for 2 minutes, mix and send to the oven for another 5 minutes.
Step 3
While the pumpkin is baking, disassemble the broccoli into small pieces (for one bite), cook for a couple of 5-7 minutes.
Step 4
For dressing, mix olive oil, raspberry vinegar, honey and a pinch of pepper and salt in a bowl.
Step 5
In a large bowl, mix all the cooled ingredients, add the blueberries, pour over the dressing, mix thoroughly and serve.
