Homemade squash caviar does not contain preservatives, dyes, thickeners. Don't be lazy to prepare healthy vegetables for the winter for your family. Zucchini caviar is perfect for sandwiches.
It is necessary
- For 5 cans with a volume of 0.5 liters:
- - 2 kg of zucchini;
- - 1 kg of carrots;
- - 1 kg of bell pepper;
- - 1 kg of tomatoes;
- - 3 heads of garlic;
- - 1, 5 teaspoon of vinegar essence;
- - 2 tbsp. tablespoons of sugar;
- - 1 tbsp. a spoonful of salt;
- - ground black pepper;
- - vegetable oil;
- - dill.
Instructions
Step 1
Rinse the zucchini, peel and seed. Pass through a meat grinder. Throw in a colander and drain off excess liquid.
Step 2
Rinse the carrots, peel and also mince. Fry in vegetable oil. Then fold in a colander and drain off excess oil.
Step 3
Grate the onion on a coarse grater. Fry in vegetable oil.
Step 4
Rinse bell peppers under running water, remove seeds. Cut into small cubes and fry in vegetable oil.
Step 5
Blanch the tomatoes in boiling water. Remove the skin and chop finely.
Step 6
Prepare a heavy-bottomed roasting pan. Place zucchini, onions, bell peppers, tomatoes in it.
Step 7
Add 0.5 cups vegetable oil. Simmer over low heat. After an hour, add salt, sugar, black pepper. Simmer for another 30 minutes.
Step 8
After 30 minutes add garlic, herbs. Continue simmering for another 20 minutes. Add vinegar essence 7 minutes before the end.
Step 9
Prepare jars. Rinse, sterilize. Boil metal lids.
Step 10
Arrange the prepared squash caviar in jars, roll up the lids. Turn upside down and put under the "fur coat" until it cools completely. Then put in a cool place for storage.
