Step 1

Apricots are carefully sorted out, spoiled fruits are removed, then washed.

The washed apricots are cut in half lengthwise to the bone, then the stone is removed, and the fruit is divided by hand into 2 halves.

The seeds can be thrown away (in case the jam is seedless), and the apricot halves are cut into small pieces. Everything is put into a bowl at once.

Step 4

Measure out 300 grams of sugar in a bowl, put 2 tablespoons in another small bowl and add jaundice there. Mix everything.

Pour the sliced apricots with a mixture of sugar and gelatin.

Very carefully, so as not to damage the fruit, mix everything with a wooden spatula. To soak everything, leave the bowl of apricots for an hour. Using this tactic, we reduce the cooking time of jam from an hour to 15 minutes, thereby preserving vitamins.

After an hour, the apricots are transferred to a saucepan and put on fire. Cook for about five minutes until "buns" appear on low heat.

After five minutes, add the remaining sugar to the apricots and mix gently with a wooden spatula.

For another five minutes before boiling, continue to cook over low heat.

Step 10

When foam appears on the surface of the jam, it means it has boiled. Remove the foam, continue cooking for another five minutes after boiling, then turn it off.

Step 11

The jam is laid out hot in pre-sterilized jars. You can roll it up, or you can just close it with plastic lids.
