  • - 125 g fresh strawberries;
  • - 0.5 tbsp. starch;
  • - 0.5 tbsp. lemon juice;
  • - 100 g flour;
  • - 5 and 1/3 tablespoons + 1/3 cup + 2.5 cups sugar;
  • - a pinch of salt;
  • - 0.5 tsp + 1 tsp vanilla extract;
  • - 6 eggs.

Instructions

Step 1

Put the oven to heat up to 180 degrees and prepare a small dish from which you can easily remove the product without covering its surface with oil.

Step 2

Sift the flour into a bowl and add 2 tablespoons to it. sugar, mix thoroughly.

Step 3

Divide 6 eggs into whites and yolks. Pour the egg whites into the mixing bowl and start whisking. As the proteins begin to thicken, add the tartar and a pinch of salt and continue whisking. Now, 1 tbsp. start adding the remaining 3 and a third tablespoons of dough sugar at a time. Whisk until soft peaks.

Step 4

Turn off the mixer and start adding flour little by little, stirring into the egg whites with a wooden spatula. Do this very carefully, trying not to squeeze the mass.

Step 5

Transfer the mixture to a mold and place in the oven for 35 minutes.

Step 6

Meanwhile, in a saucepan, combine lemon juice, a little water, a third of a glass of sugar, and a berry. Bring to a boil, then reduce heat and cook for 10 minutes. Strawberries should give a lot of juice: for this, the berries can be divided into two parts with a spatula during cooking.

Step 7

Throw the resulting syrup mixture on a sieve. Set aside the berries and return the syrup to the saucepan. Dissolve the starch in 1, 5 tablespoons. water and add to the syrup. While stirring, bring to a boil, then reduce heat and cook for 5 minutes. Transfer to another cool container and cool.

Step 8

In the meantime, your biscuit should be ready. Cool it down and gently remove it from the mold. Then use a sharp knife to divide the cake into 2 pieces. In the lower part, use a measuring spoon (it has sharp enough edges to do it neatly) and fill it with the filling. Cover with the second part and brush over with the rest of the strawberry icing!

Step 9

Just before serving, whip the chilled cream with sugar and vanilla extract (1 tsp) and cover the cake with it!
