The name of the cake is not accidental - it has a very rich apricot taste that will delight everyone! The cake looks no less appetizing, and I just want to try a piece.
It is necessary
- - 600 g of dried apricots;
- - 560 g of wheat flour;
- - 500 ml of water;
- - 200 g butter;
- - 200 g of apricot puree;
- - 200 g of sugar;
- - 50 g of walnuts;
- - 2 eggs;
- - 1 teaspoon baking powder.
Instructions
Step 1
Pour dried apricots with hot water, let it stand for 20 minutes, then cook over low heat until soft. Drain the broth, place the dried apricots in a kitchen processor, add the lemon, peeled and pitted, punch until puree, add apricot broth if necessary. Add grated lemon zest to this mass, mix - you get the filling for the cake.
Step 2
Let's prepare the cakes. Beat the softened butter with sugar until white, beat in eggs one by one, beat until smooth. Add sifted flour with baking powder, knead the dough - it should be soft. Divide the dough into six equal parts, each roll out on parchment paper, where previously draw a circle 24-25 cm in diameter.
Step 3
Bake the cakes at 200 degrees for about 10 minutes. After baking, cut the hot crust using the bottom of a split form or plate. Do this right away, the measles will become brittle after cooling! Collect the scraps of the cakes, chop them in a blender - they will be useful for decorating the finished cake.
Step 4
Let the cakes cool, then coat them with apricot puree with sugar (you can do without it), then apply the prepared dried apricot filling on top - the filling should be enough for the sides and top of the cake. Put a plate on the top cake, put a load on it, leave it overnight.
Step 5
In the morning, coat the top and sides of the cake with the remaining filling, sprinkle the sides with chopped crumbs. Top with dried apricots, apricots and chopped walnuts.
