Azu is a traditional Tatar dish that has existed for over five hundred years. The azu recipe has undergone minor changes and today you can easily prepare this dish at home. How to do the basics in Tatar correctly?

- - tomato paste (25 g);
- –Salted or pickled cucumbers (2-4 pcs.);

Instructions
Step 1
If you want to completely preserve the traditional recipe of the azu, then cook the dish in a cauldron with thick walls. First you need to prepare the meat. To do this, take a piece of beef, cut off excess veins and chop the meat into strips along the fibers. Do not forget that the taste of the finished dish depends entirely on the quality of the meat.
Step 2
Put the cauldron on the burner, pour in some vegetable oil and lay out the meat. Toast, stirring occasionally with a wooden spatula.
Step 3
The next step is to add onion cut into half rings to the cauldron. Next, put the tomato paste in a deep cup and stir with half a glass of warm water. Pour into a cauldron. After the tomato paste, add finely chopped cucumbers. Stir well again.
Step 4
Remove the skin from the potatoes and cut into even strips. Then fry the potatoes in a separate bowl. Wait until the meat in the cauldron becomes soft and put the potatoes. Then add the crushed garlic, salt and cover. Cook for at least 5-8 minutes.
Step 5
Place the finished dish in deep bowls, remembering to add the broth. Azu is considered very nutritious and makes a great addition to your daily menu. For a change, you can use meat not only beef, but also lamb.
