Ingredients for four servings:

  • Corn flour 450-500 g;
  • Water 250-280 ml;
  • Sunflower oil 400-450 ml;
  • Ground paprika and black pepper 5 g;
  • Salt and cinnamon to taste.

Preparation:

Sift the cornmeal through a sieve into a wide, deep bowl. Add hot water and knead the dough. During the kneading process, add paprika, pepper, cinnamon and salt. Then add 25-30 ml of sunflower oil. Knead thoroughly so that the dough does not stick to your hands.

Divide the resulting dough into balls of the same size with a diameter of 6-7 cm. Roll the balls with a rolling pin between two sheets of parchment paper. Sprinkle the paper lightly with flour so that the dough does not stick. You should get a cake with a thickness of 2-3 mm. The tortilla is lightly fried on both sides in a pan for 30 seconds. Using a sharp knife or pizza roller, cut the cake into 8 equal pieces.

Sunflower oil is poured into a deep saucepan or deep fryer and heated to 180 degrees. One chopped nachos is gently dipped into boiling oil for 40-50 seconds. To prevent the chips from sticking together, they need to be constantly mixed and you should not throw more than 8-10 pieces. You should have golden and crunchy nachos.

Spread the finished chips on paper towels to absorb the excess oil.

Grease a baking sheet with oil, lay out the fried nachos. On each triangle, put chopped peppers, grated cheese and a little thick sour cream. Heat the oven to 180 degrees and place the baking sheet for 3-4 minutes.

The nachos chips are ready.

Traditionally, Mexican nachos are served with cheese or Guacamole sauce.

Cheese sauce

Ingredients:

  • Butter 130-150 g;
  • Cheddar cheese 500 g;
  • Sour cream 20% 250-270 g;
  • Ground chili pepper 5 g;

Preparation:

Melt the butter in a water bath. Cheese is grated on a fine grater and combined with butter. Put the mass on a small fire and stir constantly. The cheese should melt. Do not let the mass boil. Once the cheese has melted, add the sour cream. Stir everything thoroughly so that the mass becomes even and without lumps. Add chili powder and remove from heat. Cool the sauce to room temperature and pour into a saucepan.

Guacamole sauce

Ingredients:

  • Medium avocado 1 pc.;
  • Cherry tomatoes 4 pcs.;
  • Onion 1 pc.;
  • Lemon or lime ½ pc.;
  • Hot red pepper 1 pc.;
  • Garlic 1 clove;
  • Cilantro 3 sprigs;
  • Salt to taste.

Preparation:

Wash the avocado, divide into two parts, remove the pit and pulp. Mash the pulp with a fork and add lemon or lime juice.

Peel the red pepper, wash and dry. Chop finely afterwards.

Peel and chop the onion and garlic.

The avocado pulp is combined with peppers, onions, garlic and chopped cilantro. Salt is added to taste.

The tomatoes are washed, chopped finely and mixed well with the avocado mixture.

The sauce is ready.

Place a saucepan on a large dish in the center and lay out the chips. The dish is served on the table.
