It is necessary
- - mushrooms
- - baking sheet from the stove
- - plastic tray
- - parchment
- - canvas or thick cotton thread
- - thick darning needle
- - gauze
Instructions
Step 1
Sort the mushrooms by type. It is worth noting that not all are suitable for drying. Most often, tubular mushrooms are dried at home. Bitterness is often present in lamellar, which does not disappear when dried. Honey mushrooms can be an exception, they do not contain bitterness. White, boletus, boletus, boletus, as well as morels and stitches are good for drying. Some mushrooms have significantly improved taste when dried. First of all, this applies to porcini mushrooms.
Step 2
Remove any dirt from the mushrooms. The mushrooms intended for drying cannot be washed; it is enough to shake off the needles, moss and other dirt from them with a cloth. The small ones are dried whole, and the large ones are cut into small pieces. Large legs are divided into castors 2-3 centimeters wide.
Step 3
Arrange the mushrooms on parchment-lined trays. The distance between them must be sufficient for free air circulation. Place the trays on your balcony or loggia. The readiness of dried mushrooms is determined quite simply: if, when bent, the cap retains its elasticity, but breaks with effort, then it is time to store the mushrooms. Small mushrooms or finely chopped caps dry faster, it is important not to dry them out and remove them on time.
Step 4
Use a thick cotton thread and a large darning needle. Pierce small mushrooms in the middle of the cap and distribute one by one along the length of the entire thread. These mushroom beads can be dried directly in the sun. Tie them a short distance apart and cover with a piece of gauze to keep out dust and flies.
Step 5
Spread the mushrooms on paper and leave in the sun to dry a little. Then spread evenly on a baking sheet lined with parchment. Place the baking sheet in an oven preheated to 60-70 ° C. This method is optimal for drying mushrooms. As they dry, they are immediately removed and prepared for storage.
