Fresh pies are associated with home warmth, coziness, tranquility. They are prepared with various fillings - vegetable, sweet, meat, fish. Pies with mushrooms are also very tasty and aromatic.
Fried pies with mushrooms
For the dough, take 1 kg of wheat flour, 500 ml of milk, half a packet of butter, a couple of eggs, a packet of quick action yeast, 3 tbsp. l sugar, a pinch of salt. For the filling, prepare 600-700 g of forest gifts, 250 g of cheese, 3 onions.
Mushrooms can be used different: forest, store, dry, fresh, pickled.
Pour yeast with a small amount of warm milk, put 1 tbsp. l sugar and the same amount of flour. Stir, let stand for a few minutes, so that the dough rises slightly. After that, combine it with the remaining milk, sugar, salt, butter melted in a water bath, beaten eggs, stir everything well.
Start gradually adding flour, knead the dough. As a result, it should turn out to be soft, elastic. Cover the finished dough with a napkin, put in a warm place so that it rises. When this happens, wrinkle it again, leave it again.
Prepare the filling. Peel the onion from the husk, chop into small cubes, put in a pan, fry until golden brown. Add mushrooms to it, also cut into small pieces. Pre-boil fresh mushrooms, and steam dry ones in boiling water. Fry all cooked, salt, add pepper to taste, add grated cheese, mix everything.
Roll the matching dough into a rope, which is divided into pieces weighing about 40 g. Roll them into balls, let them lie down for about a quarter of an hour, roll them into neat flat cakes 0.5 cm thick. Put the filling in the middle of each of them, pinch the edges carefully. Fry semi-finished products in a pan with boiling vegetable oil on both sides until tender.
This makes about 50 pies.
Baked pies with mushrooms
Take 1 kg of yeast dough, an egg, 500 g of any mushrooms, a couple of onions, 2 large spoons of butter, salt, pepper.
Boil the mushrooms, chop finely or pass them into a meat grinder. Fry the onion until half cooked, put the gifts of the forest, pepper, salt to it, fry everything until tender. Shape the patties as described in the recipe above. Put them on a baking sheet lined with parchment paper, cover everything with polyethylene, let stand for about 10 minutes. Then, using a special brush, brush the blanks with a beaten egg. Bake in an oven preheated to 190 degrees for 15 minutes.
Puff pastry mushroom pies
It is necessary to prepare 1 kg of ready-made puff pastry, 500 g of fresh mushroom caps, 1 onion, 60 ml of sour cream, 2 dessert spoons of butter, half a handful of bread crumbs, dill, pepper, salt.
Wash the mushroom caps, cut into 2-4 parts, simmer until liquid begins to stand out from them, add fried onions, pepper, salt, chopped dill, crackers, sour cream. Stir, simmer for about half an hour over low heat, cool.
Cut out circles from the dough, roll them out, leave for 10 minutes for layering. Place the filling in the center of each mug, form the pies. Bake on a baking sheet in an oven preheated to 180 ° C until the top is browned.
