Gazpacho is a cold soup that belongs to Italian cuisine. It is usually made from grated vegetables, but we will make an unusual gazpacho - from strawberries.
It is necessary
- For six servings:
- - strawberries - 1, 2 kg;
- - raspberries - 250 g;
- - dry white wine - 100 ml;
- - sugar - 90 g;
- - three passion fruit;
- - two nectarines;
- - fresh mint - 6 leaves.
Instructions
Step 1
Rinse the strawberries, peel them of the green tails. Set aside 200 grams. And from a kilogram of strawberries, make mashed potatoes with sugar. Then pass the strawberry puree through a fine sieve, add dry wine to it.
Step 2
Cut the passionfruit in half, add the seeds to the strawberry puree.
Step 3
Finely chop nectarines and strawberry leftovers. Add whole raspberries to the strawberry puree.
Step 4
Cover this mixture, put in the refrigerator to cool. Serve ready-made strawberry gazpacho in soup bowls, garnished with mint leaves and whole strawberries. Bon Appetit!
