Gazpacho is one of the most famous tomato soups, and it rightfully enjoys a well-deserved fame. The soup is tasty and healthy, because it contains only vegetables that have not been heat-treated, rich in vitamins and microelements. The butter and bread in the classic recipe make the soup more satisfying. In hot weather, gazpacho is a great alternative to okroshka.

- 2-3 large ripe tomatoes
- 1 sweet fleshy pepper
- 1 glass of tomato juice
- 1-3 slices of toasted white bread
- 1 cucumber (fresh or lightly salted)
- 2-3 cloves of garlic
- 1 onion
- 2-3 st. l. olive oil
- greens (cilantro, dill, parsley, rosemary, basil)
- salt and pepper to taste
Instructions
Step 1
Scald tomatoes with boiling water and remove the skin. We cut into several parts for the convenience of bookmarks in a blender.
We clean the peppers from the seed chambers and prepare them for grinding.
Step 2
We clean the onion, garlic. We wash and chop (not too finely) the greens.
Step 3
We put vegetables in a blender: chopped tomatoes, cucumber, peppers, onions, garlic. In addition, we add slices of white bread there (it gives the dish the necessary thickness). Grind until you get a puree mass.
Step 4
Mix vegetable puree with tomato juice, add salt and pepper to taste, olive oil, chopped herbs.
