Step 1
Cut the bread into small, flat slices. Arrange the bread in one row on a baking sheet and place in the oven. You need to dry the bread at a low temperature, until golden brown. The crust should not be overcooked, otherwise the kvass will acquire a bitter taste.
Step 2
Put all the crackers in a three-liter jar and fill with hot water, without adding about 7 cm. Add 3 tablespoons of sugar to the jar and leave the contents to cool to 36-38 degrees.
Step 3
Stir the yeast in half a glass of warm water until it is completely dissolved. You can take live yeast for making kvass, but then you need 60 g. Pour water with yeast into a jar of bread. Cover the jar with a saucer and place in a warm place for 2 days.
Step 4
After 2 days, strain the kvass through cheesecloth or a sieve, so as to completely separate all the thick. Place the grounds in the refrigerator. Pour the remaining sugar and raisins into the jar. The raisins must first be washed thoroughly. Stir the contents well and leave in a warm place for 12 hours.
Step 5
Pour the kvass into bottles and close the lids very tightly. Put the kvass in the refrigerator for a day. After a day, you can drink kvass.
Step 6
The remaining thick will serve as a leaven during the next preparation of kvass. Instead of yeast, you will need to add 4 tablespoons of sourdough, and then follow the recipe.
