Step 1
Classic pancakes must be kneaded with kefir of high fat content, or with sour milk. You can use kefir that has stood in the refrigerator.
Required products: kefir 500 ml, 1 egg, 2 tablespoons of sugar, 0.5 teaspoon of salt, 1 teaspoon of soda without top, enough flour to make a knead slightly thicker than sour cream.

Pour kefir into a saucepan, the volume of which is 1 liter, break 1 egg there, add sugar, salt, soda. Mix everything thoroughly, you can use a mixer. The mass should become fluffy and bubbly. This occurs as a result of the interaction of soda and kefir.
Step 3
Then gradually add flour, stirring the dough. Add flour in portions - as much as needed to achieve a slightly thicker consistency than sour cream. Let the thoroughly mixed batch rest for 5 minutes. The dough should be smooth and not runny.
Step 4
Pour vegetable oil into a well-heated frying pan and spread the pancakes with a tablespoon. Bake the pancakes on both sides until golden brown.
You will get the most magnificent pancakes on kefir, the fat content of which is at least 3.2%.
Step 5
Put the finished pancakes on a plate. Serve with honey, any jam, sour cream, butter.

Yeast-made pancakes are no worse: they are just as lush and tasty. You just need to wait for the yeast dough to come up. The big advantage of kefir pancakes is that they can be baked immediately after mixing.
