In order to make jam, pectin is needed, it is he who helps to achieve, in combination with fruit acids and sugar, the consistency of jelly. There are different amounts of these substances in different fruits, but most of them are in immature ones. Therefore, preparing for cooking jam, you need to stock up on both ripe gooseberries and some unripe, green ones.
Step 3
Select only good, undamaged berries, set aside the rest, they are not suitable for harvesting. To make gooseberry jam, you need a kilogram of sugar and a glass of water per kilogram of berries.
Step 4
Rinse the berries well, then remove all stalks and sepals. In a wide bowl with low walls and a wide bottom, place two-thirds of the gooseberries and boil in a little water over high heat. Jam is always cooked on such a fire. This is necessary so that substances that can destroy pectin are immediately destroyed. When the berries are boiled and soft, rub them through a sieve and place them back in the bowl and boil, adding sugar.
Step 5
Pre-pierce some of the unripe gooseberry berries and add to the boiled berry syrup. Stir constantly and cook until it's done. Finding out if the jam is ready is easy. To do this, scoop up a spoonful of jam. If it is ready, it will be pulled by a thread. If not yet, it will drip. You can also wait for it to cool on a spoon and watch it drip. The finished jam will fall in pieces, the one that still needs to be boiled will drain.
Step 6
Gooseberry syrup is not a very pretty color. To make the jam more appetizing in appearance, add a spoonful of berry juice - cherry or orange to the syrup. After the jam has cooled down a bit, place it in clean, sterilized jars and roll up. A delicious treat is ready!
