Thinking over the New Year's menu 2019, I want not only to tasty and satisfying food for guests, but also to show off my culinary talents. Meat rolls with filling look very nice on the festive table, they are tasty and quite easy to prepare.
Beef roll stuffed with eggs
- 1 kg of beef;
- 5 pickled sweet peppers;
- 100 g spinach;
- 150 g bacon slices;
- 4 eggs;
- half a glass of white wine;
- salt and pepper;
- vegetable oil.
- 100 g cherry tomatoes.
Peel the boiled eggs, chop the spinach, cut the pickled peppers in half. Cut the beef so that it opens into a book about 1-1.5 cm thick, salt and pepper to taste, given that the bacon is quite salty.
Place the bacon slices, spinach and pickled peppers on top of the beef. Cut the eggs lengthwise, lay on top of the pepper, form a roll and tie it tightly with culinary thread. Transfer the roll to a baking sheet, pour with a little oil, cover with foil and send to an oven preheated to 180C for 25 minutes. Then remove the foil, turn the meat, pour in the wine, add the cherry tomatoes and bake for another 20 minutes.
Serve meat immediately after cooking, cutting off the culinary thread beforehand.
Beef roll stuffed with prunes and eggs
- beef - 1 kg;
- 50 g pitted prunes;
- 2 medium-sized carrots;
- 150 g green beans;
- 4 boiled eggs;
- 150 g bacon slices;
- green onions for serving;
- 100 ml of white wine;
- oil for frying.
Cut carrots and green beans into strips, fry separately in a little oil until soft, cool. Cut the prunes into small pieces. Cut the beef so that you get a rectangle 1-1.5 cm thick, season with salt and pepper. Put the filling in the following order: bacon slices, egg slices, prunes, carrots, green beans.
Form a roll of beef, send it to an oven preheated to 180C for 1 hour, periodically pour with water and white wine so that the meat does not dry out.
Garnish with chopped green onions before serving. Any vegetables or fruits caramelized in a pan (for example, apples or pears) are suitable as a side dish for the meatloaf.
